I tried the Mediterranean Salad and it was delicious! I'm not a lettuce fan either, so this one worked for me! I didn't have cooked orzo on hand, so I subbed with quinoa. I can't wait to cook up some orzo for tomorrow's version!
Just made the "smoky vegan burrito bowl" but added chicken as well (mostly I am making a batch of it for a week, and my serving sizes didn't quite come out large enough so I added more protein to help). It smells amazing and if it looks half as pretty as yours when I assemble it for work tomorrow, I'll instagram it 😛

But can I really store all of these for the whole week? I feel like they would go bad.. Never did meal prep before so I have basically no idea on how to do this.
How do these meals hold up through out the week though? I’ve tried to meal prep all my lunches ahead of time and some don’t taste that great come Thursday Friday.

How do you get rid of the old chicken taste? Whenever I put chicken in the fridge over night it taste funny ?
Potatoes are the best! Especially with grainy mustard dressing.
